Pesto Pasta Salad with Tomatoes and Mozzarella

This Caprese-inspired pasta toss is the ultimate summer main dish for a busy weeknight, summer get-together, or lunch on the go.

Ingredients:

  • 12 ounces vegetable farfalle
  • 2 cups fresh basil leaves
  • 2 tbsp EVOO
  • 2 tsp grated lemon rind
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 garlic clove, peeled
  • 2 cups grape tomatoes, halved
  • 8 ounces fresh mozzarella cheese, cut into 1/2-inch cubes, divided
  • 1 ounce Romano cheese, grated

Directions:

  1. Cook pasta according to package directions, omitting salt and fat; drain. Place pasta in a large bowl.
  2. Combine basil and next 5 ingredients (through garlic) in the bowl of a food processor; process until smooth. Add basil mixture, tomatoes, and 4 ounces mozzarella to pasta; toss to combine. Top with remaining Mozzarella and Romano cheese. Serves 4 (serving size: about 2 cups).

 

I chose to serve this with Sautéed Summer Squash with Thyme and Almonds. Cutting the squash into rather thick slices helps it retain a bit of crispness after it’s sautéed.

Ingredients:

  • 1 tbsp EVOO, divided
  • 1 large zucchini, halved lengthwise and cut into 1/2-inch-thick slices
  • 1 large yellow squash, halved lengthwise and cut into 1/2-inch-thick slices
  • 1/4 cup sliced almonds, toasted
  • 1 tsp chopped fresh thyme
  • 1 tsp fresh lemon juice
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper

Directions:

  1. Heat a large skillet over medium-high heat. Add 1 1/2 tsp oil to pan; swirl to coat. Add zucchini; sauté 4 minutes or until crisp-tender. Place zucchini in a bowl. Add remaining 1 1/2 tsp oil to pan; swirl to coat. Add yellow squash; sauté 4 minutes or until crisp-tender. Add yellow squash and remaining ingredients to zucchini; toss to combine. Serves 4 (serving size: about 1/2 cup).
